Introduction to Cooking with Soapstone
Soapstone is the only natural stone known to man to be able to withstand drastic temperature fluctuations without cracking or breaking. Other natural stones such as Marble and Granite have mineral characteristics that are very hard and non conducive to drastic and sudden temperature changes. The talc and magnesium components of Soapstone give it a pliability not found in other natural stones. Soapstone is also more dense than granite and marble. This attribute gives it the ability to absorb a given temperature and retain it for longer periods of time. For instance, if you are cooking a stew in a soapstone pot, the pot can be removed from the heat source 15-30 minutes before the stew is quite finished as it will continue to cook in the heated soapstone vessel. This also means that food can be served in heated soapstone and the meal will remain hot for an extended period of time "naturally". As we say with our Pizza Stones... Hot to the last slice!
